Le vin est chauff\u00e9 progressivement et passe par plusieurs colonnes avant d\u2019atteindre une chaudi\u00e8re. Il se transforme alors en vapeur, qui se condense ensuite en eau-de-vie. contribuent \u00e0 la richesse et \u00e0 la diversit\u00e9 de cette eau-de-vie. En tout, une dizaine de c\u00e9pages sont autoris\u00e9s, mais certains se d\u00e9marquent par leur popularit\u00e9 et leurs caract\u00e9ristiques. Au domaine de Targuerie, nous cultivons notamment le Baco, le Colombard, l&rsquo;Ugni blanc et la Folle blanche.<\/p><p>Le Baco, un croisement entre le Folle blanche et le c\u00e9page am\u00e9ricain Noah, est particuli\u00e8rement appr\u00e9ci\u00e9 pour sa robustesse et sa capacit\u00e9 \u00e0 produire des eaux-de-vie riches et fruit\u00e9es. Le Colombard, quant \u00e0 lui, est connu pour ses ar\u00f4mes vifs et frais, apportant une belle vivacit\u00e9 \u00e0 nos distillats. L&rsquo;Ugni blanc, le c\u00e9page le plus cultiv\u00e9 en France pour la distillation, se distingue par sa neutralit\u00e9 et sa capacit\u00e9 \u00e0 conserver l&rsquo;acidit\u00e9, essentielle pour un bon vieillissement. Enfin, la Folle blanche ajoute finesse et \u00e9l\u00e9gance avec ses notes florales et fruit\u00e9es.
